SEO by Yoast has option in the setting where you can change << with |. Install SEO by Yoast and go to the SEO -- Titles & Metas-- and in the here you change the title and characters which you want in the post. eg go to Post Type and type %%title%% | %%category%% | %%title%%. This will make your title as name of the post | category name | title of the site. You go to help tab in the same view to choose various option. This is very good plugin.
