I had exactly the same question a week ago and it wasn't until I watched a few YouTube vids of how to set up Yoast that someone pointed this out.
Agreed... "Title template" and "Meta description template" is confusing and not obvious. I have entered what I wanted in these fields.
Anyway looks like we both sorted :)
